    Baked Tilapia with Besto Pesto and Panko

Serves 3 - 4
1 lb. tilapia (or other mild fish)
1/2 cup panko crumbs (breadcrumbs / Japanese breadcrumbs)
1 lemon - thinly sliced
1/4 - 1/2 cup Besto Pesto
1 egg beaten
olive oil
Lightly oil a baking pan. Dip fish in bowl with beaten egg. Then dip into the panko to cover. Place fish in pan and spread pesto on top. Cover the fish with thin slices of lemon. Bake 15-20 minutes at 450 degrees (this will depend on the thickness of the fish).
